I am delighted to announce the launch of my latest cookbook, A Taste of Home, which showcases the best ingredients Ireland has to offer with a collection of delicious, reliable recipes.
A Taste of Home is my food story from Ballyknocken House, nestled in the gentle rolling hills of County Wicklow, where three generations of my family have lived and farmed for over 100 years – something I am very proud of.
I combine modern Irish food with farm-to-fork principles, taking traditional Irish recipes and giving them my own twist to reflect the abundance of ingredients available on my doorstep.
Recipes include classic Irish family dishes such as Beef and Stout Pies with Potato Pastry Topping, Lamb Wellington with Wild Garlic, Farmhouse Soups with Soda Bread, as well as Italian-style Tomato, Shallot and Rosemary Chicken Hotpot, Ballyknocken Dauphinoise Potatoes and my ‘To Die For’ Lemon Meringue Pie.
