A personal favourite of mine, these Courgette Fritters are a perfect Weekend snack or Brunch.

Courgette Fritters with Chives and Sour Cream
Makes about 12 depending on the size
For the fritters
100g grated courgette
120g plain flour
1½ tsp baking powder
30g shredded spinach
2 very finely sliced spring onions
3 tbsp grated parmesan
½ tsp paprika
1 tsp chopped thyme
1 tbsp chopped chives
½ tsp salt
2 eggs
120ml milk (you may need a little more)
Oil, for frying
Sour cream, to serve
Chives, to garnish
To prepare the batter for the fritters, place the grated courgette into a clean tea towel and squeeze the excess liquid out. Place the grated courgette into a bowl. Add the plain flour, baking powder, spinach, spring onion, parmesan, paprika, thyme, chives and salt together in a bowl.
Add the eggs and milk and mix well to form a thick batter.
If you feel that the batter is too stiff, add a tablespoon or two of water.
To cook the fritters, heat a large non-stick frying pan with a little oil over a medium heat. Spoon batter into the frying pan and leave to cook. When light bubbles appear on the surface of the fritters, they are ready to be turned over to cook until golden on the other side.
Serve warm with sour cream or pesto and garnish with chives.
