Growing up on a traditional Irish farm here I was well used to potatoes; and they were either mashed or roasted. Can you imagine my delight when I took my first taste of Patatas Bravas with that spicy tomato sauce drizzled over roast potatoes. I fell in love with potatoes all over again. So; we need to think beyond the humble spud. We need to think of potatoes as a fresh, exciting, Irish ingredient in our kitchens.
