Makes about 20

For the pastry

7¾oz/ 220g pastry flour

3¾oz/ 110g diced chilled butter

¼ tsp salt

1 egg yolk

Cold water

For the filling

7¾oz/ 220g pork sausage meat

3 finely chopped shallots

2oz/ 60g grated mature cheddar cheese

1¾oz/ 50g (a small) grated apple

1 tsp Worcestershire sauce

½ tsp paprika

2 tsp chopped thyme

½ tsp Dijon mustard

Salt and freshly ground black pepper

Egg wash, to glaze

Black sesame seeds, to sprinkle on top

For the dipping sauce

2 tbsp Dijon mustard

4¼oz/ 120g mayonnaise

2fl oz/ 60ml cream

2 tbsp honey

Dash of paprika

Thyme, rosemary sprigs, to garnish

To prepare the pastry, place the flour into a bowl, add the butter and rub in until it looks like fine breadcrumbs. Add the salt, egg yolk and enough cold water to make a stiff dough.

Wrap and leave it to rest for 30 minutes in the fridge.

Preheat the oven to 410°F/210°C/fan 375°F/190°C/gas 7.  Line a baking tray with parchment.

To prepare the filling, combine the pork sausage meat, chopped shallots, grated cheddar cheese, apple, Worcestershire sauce, paprika, chopped thyme and mustard. Add salt and freshly ground black pepper and mix well.

When ready to assemble, roll out on a floured surface to 15inch length x 7½inch.

To assemble, slice the pastry lengthways in half and ensure that the 2 pieces don’t stick on the floured board.

Place sausage meat onto the pastry, about 1inch from the edge.

Brush the long edge of the pastry with egg wash.

Cover over with pastry.

Press down and use a fork crimp it.

Repeat for the other piece of pastry.

Use a sharp knife, dusted in flour to cut 4cm slices.

Place on a baking tray lined with parchment.

Brush with egg wash and sprinkle over black sesame seeds.

Bake for 20 to 22 minutes until golden and cooked.

Leave to cool on a rack.

To prepare the dipping sauce, combine all the ingredients together and whisk lightly.

Check the seasoning you may need a little salt and freshly ground black pepper.

When ready to serve, place on a platter, garnish and serve with mustard dipping sauce.
