Cherry Goats Cheese Crostini with Balsamic Glaze

Makes 12

12 slices toasted baguette

 

For the balsamic glaze

6¾ fl oz balsamic vinegar

2 oz caster sugar

2 tbsp honey

 

For the cream spread

5½ oz soft goat’s cheese

1 orange, zest only

½ tsp ground cumin

2 tbsp maple syrup

 

8¾ oz cherries (about 36 cherries with stalks on)

Basil leaves, to garnish

 

To make the balsamic glaze, pour the vinegar in the saucepan and add the sugar. Stir and bring to the boil, then reduce the heat to a simmer and cook very gently for about 5 to 6 minutes until it is glossy, thick and syrupy. Leave to cool completely.

To make the cream spread, combine the goat’s cheese, orange zest, ground cumin and maple syrup together and spoon into a piping bag.  

To assemble the crostini, place the crostini on a serving platter, pipe the goats cheese mixture over the crostini or you can also spread it on with a small spatula.

Arrange 3 cherries on top.

Spoon over a little balsamic glaze onto each crostino.

Garnish with basil leaves.

Serve immediately.

Tip: There will be leftover balsamic glaze with this recipe – its delicious in salads or over strawberries!
