Chilled Mint Tea

Makes 500ml

3 medium sprigs of mint
500ml boiling water
Honey, to taste

Ice, to serve
½ cucumber, to serve
8 thin slices of lemon, to serve
Extra sprigs of mint, to decorate

You will need 3 to 4 glasses depending on the size

Place the sprigs of mint into a large teapot or jug and pour over the boiling water.
Leave to infuse for 15 minutes. Taste the tea, if you feel it needs longer then leave it in.
Add honey to taste when it is still warm. The mint tea must be cold before you use it.
Add ice into the glasses.
Using a peeler, ribbon the cucumber, twist and place it into the glasses.
Pour in the tea and add a slice of lemon in each.
Decorate with a few fresh sprigs of mint.
