Makes 28 sticks
For the pastry
180g plain flour
½ tsp salt
¼ tsp paprika
80g butter
1 egg yolk
4 tbsp cranberry sauce
200g brie cheese, thinly sliced
Chopped parsley
Preheat the oven to 200C/fan 180C/gas 6.
To make the pastry, Place the plain flour, salt and paprika into a bowl.
Dice the butter and rub it into the flour so it resembles breadcrumbs.
Add the egg yolk and enough cold water to form a dough.
Wrap with parchment and leave in the fridge to rest for 1 hours.
Roll out the pastry into a rectangle shape. Trim off the edges.
Spread the cranberry sauce of the pastry.
Slice in half and then slice strips 1.5 or 2cm wide.
Arrange the slices of brie, you may have to cut them to fit on top.
Place on a parchment lined baking tray and place in the oven for about 15 to 18 minutes until the pastry is cooked. (This will depend on the size and thickness of the pastry slices)
Leave to cool and sprinkle over the chopped parsley.
