For the dressing
4 tbsp mayonnaise
4 tbsp natural yoghurt
1 tbsp horseradish sauce
½ lemon, zest and juice
Salt and fresh ground black pepper
For the salad
2 tbsp sultanas, soaked in 2 tbsp apple juice
2 celery stalks, trimmed and diced
2 apples, peeled, cored and diced
¼ head red cabbage, very thinly sliced
¼ head savoy cabbage, thinly sliced
2 tbsp chopped fresh chives
Chives, for garnishing
To prepare the dressing, place the mayonnaise, natural yoghurt, horseradish sauce, lemon zest and juice in a bowl and stir to combine in a large bowl. Season with salt and pepper.
Add the sultanas, celery, apples, shredded red and savoy cabbage and chives to the dressing.
Check the seasoning, adding salt and pepper to taste.
Mix well and garnish with chives over the top.
