Energy Bites
Makes 9 depending on the size
60g blanched whole almonds
100g dates
2 to 3 tbsp water
3 tbsp dried cranberries
2 tbsp raw cocoa powder
1½ tbsp nut butter
1 tsp honey
2 tbsp chia seeds
Extra cocoa, to dust (optional)
Add the almonds into the food processor and blend slightly.
Add dates, water, cranberries, raw cocoa, nut butter and honey, chia seeds and blend well.
Depending on how dry your dates are – the mixture maybe a little sticky.
Roll into small balls and place them in the fridge for about ½ hour.
An added extra is to dust the energy bites with cocoa.
