Food has always been my passion. I was fortunate to grow up here at Ballyknocken Farm. As a child, I had fantastic fun here, helping my father collect the eggs, feed the calves and lambs, milk the cows, make the butter, skim the milk for cream, collect garden and wild fruits….. and helping my mother to cook breakfast, lunch and dinner for the guests of our Bed & Breakfast. So I learned at a very early age the importance of fresh food…
