Summer Sushi


Makes 8

1 cucumber
100g smooth cream cheese
2 tbsp chopped chives
100g cooked crispy bacon, chopped
3 tbsp sundried tomato halves, chopped finely

Salt and freshly ground black pepper

For the dipping sauce
3 tbsp balsamic vinegar
1½ tsp brown sugar

Lemon zest, to garnish

Using a peeler, peel the cucumber lengthways into ribbons.
Flatten out the strips of cucumber, pat dry and spread with cream cheese.
Sprinkle over the chives, bacon and chopped sundried tomatoes.
Season with salt and freshly ground black pepper.
For the dipping sauce, combine the balsamic vinegar with the sugar and stir well.
Roll up and place on a serving platter and serve with the dipping sauce.
