420g peeled, diced, deseeded watermelon
4 mint leaves
4 clean used small yoghurt containers
4 wooden lolly sticks
Place the watermelon, mint leaves and honey into a food processor and pulse a few times until just textured (careful not to over process).
Pour into clean small yoghurt containers and insert a lolly stick in each ½ way down.
Place on a tray, transfer into the freezer for at least 8 hours or until set.
Cover with clingwrap as soon as they are slightly set on top.
To unmould, dip them in hot water for a few seconds, pierce the base of the container and the lollies will release.
